It is one of the most recognizable elements of the local food culture, linked to the city&#8217;s peasant history and the daily relationship with community ovens.<\/p>\n<p data-start=\"419\" data-end=\"769\">Its shape is tall, irregular, almost sculpted. The crust is thick and golden, while the crumb remains compact, fragrant and able to keep for a long time. This characteristic is not a coincidence: in the past, bread was prepared at home and baked in communal ovens, often once a week. It had to last, nourish and accompany many meals.<\/p>\n<p data-start=\"771\" data-end=\"1062\">One of the most interesting features concerns its shape. According to tradition, it recalls the profile of the Murgia Materana or the reliefs of the landscape surrounding the city. Regardless of interpretation, it is a bread that seems to carry within itself a precise idea of \u200b\u200bterritory.<\/p>\n<p data-start=\"1064\" data-end=\"1389\">Its flavor comes from durum wheat semolina, slow processing, and a cuisine that is only apparently humble. A slice of Matera bread with extra virgin olive oil, tomato, bran peppers or local cheeses can tell a lot about Lucanian gastronomy: few ingredients, great substance, no need to complicate.<\/p>\n<p data-start=\"1391\" data-end=\"1571\">Tasting it during a stay in Matera means coming into contact with a real part of the city.
